The life cycle of the vine is divided into stages that follow the seasons.

There are five basic phases that the vine undergoes:

– Sprouting
– Blossom
– Fruit approach
– Tinge
– Approach

The buds shoot in spring, usually in March. There are three types of buds:

1. Summer buds
2. Sleeping buds that open in spring and produce flowers and fruits
3. Inactive buds that do not produce anything for several years

Blossoming takes place after budding, usually from the end of April to the beginning of June.

The berries are formed from the pollinated fruit buds immediately after flowering. The unfertilized atrophy and fall off. The vines are very susceptible to diseases and pests during this period.

The fourth phase of the vine’s biological cycle is the colouring of the berries. Depending on the type of vine, the berries have the typical yellow or red colour. The white wines are yellowish in colour and the red wines are blue in colour. The more sun reaches the berries, the faster they colour.

The maturing phase of the grapes takes place approximately 40 to 50 days after colouring. The colour of the berries intensifies, the berries become larger, the sugar content increases and the acid content decreases. If grey mould forms on the ripe berries of the grapes, this is noble rot. The sugar content increases and high-quality wines are produced from these berries (Auslesen, Beerenauslesen, Trockenbeerenauslese).

This is the last phase of the vine’s biological cycle and the fruits can be grown in late summer or autumn.
